Traditional Moroccan kitchen Part I - Chicken Tajine

  • 4 chicken thighs

  • 1 large onion, finely chopped

  • 2 garlic cloves, finely chopped

  • 2 tbsp olive oil

  • 1 tsp ground ginger

  • 1 tsp ground cumin

  • 1 tsp ground paprika

  • 1 tsp ground cinnamon

  • 1 tsp ground turmeric

  • 1 preserved lemon, cut into quarters

  • 1/2 cup green olives, pitted

  • 1/2 cup chicken stock

  • Salt and pepper to taste

  • Fresh cilantro for garnish


  1. In a large tagine or Dutch oven, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the tagine and set aside.

  2. In the same tagine, add the onion and garlic and sauté until softened and translucent.

  3. Add the ginger, cumin, paprika, cinnamon, and turmeric to the tagine and cook for 1-2 minutes, stirring constantly.

  4. Add the chicken back to the tagine, along with the preserved lemon and olives. Pour in the chicken stock and season with salt and pepper.

  5. Cover the tagine with a lid and let simmer over low heat for 45 minutes to an hour, or until the chicken is cooked through and tender.

  6. Garnish with fresh cilantro and serve with crusty bread or couscous.
